Corn and Black Bean Salad

This salad is the perfect base for your burrito bowls or as a side with anything grilled!
Prep Time 10 minutes mins
- 1 can corn
- 1 can black beans
- 1/2 cup roasted red peppers, chopped
- 1 medium onion, chopped
- 1/2 lime, juiced
- 1 tsp salt
- 1 tsp cumin
- 1/8 tsp cayenne pepper
- 2 tbsp fresh cilantro
Drain and rinse black beans and corn.
Mix all ingredients together.
Adjust seasonings to taste. If your canned corn or beans are already salted, you may want to decrease the amount of salt you add.
Refrigerate until ready to eat!
