Corn and Black Bean Salad

This salad is the perfect base for your burrito bowls or as a side with anything grilled!

Servings 4

Ingredients
  

  • 1 can corn
  • 1 can black beans
  • 1/2 cup roasted red peppers, chopped
  • 1 medium onion, chopped
  • 1/2 lime, juiced
  • 1 tsp salt
  • 1 tsp cumin
  • 1/8 tsp cayenne pepper
  • 2 tbsp fresh cilantro

Instructions
 

  • Drain and rinse black beans and corn.
  • Mix all ingredients together.
  • Adjust seasonings to taste. If your canned corn or beans are already salted, you may want to decrease the amount of salt you add.
  • Refrigerate until ready to eat!
